Zivi’s Caramelized Banana Oatmeal

1.) This most basic version of this oatmeal includes very simple ingredients that you probably already have in your pantry. A few special toppings help elevate this dish.

2.) Heat a pan to medium heat with a touch of coconut oil or butter. Slice up your banana, and place each slice in the pan. Cook the slices for about 4 minutes or until golden, and then flip each slice and cook for another 4 minutes or so.

3.) In the meantime, fill a microwave safe bowl with your quick oats and water, and microwave for 2 minutes, or until the oats have completely soaked up the water.

4.) Stir in 1/4 cup of your milk of choice and a pinch of salt. In this recipe, we used Mooala Banana Milk, but you could use a nut milk or regular milk.

5.) Top your oatmeal with your caramelized bananas, almond butter, berries, cinnamon, and kefir if you’d like.


Zivi’s Caramelized Banana Oatmeal (Total Time: 12 minutes, Prep Time: 4 minutes, Serves: 1)

Believe it or not, I’m not really a huge fan of oatmeal. I’ll eat it, but I don’t really make it very often for myself. My roommate, Zivi, on the other hand, loves oatmeal and eats it in some shape or form every morning. After trying her oatmeal a few times last year, I found out that oatmeal is like an empty canvas that you can top with just about anything to make it taste delicious. While I still don’t plan on trading my morning smoothie and granola for oatmeal, this recipe is as good as it gets, especially if you’re an oatmeal lover.

Ingredients

1/2 cup quick oats

3/4 cup water

1/4 cup milk of choice

pinch of salt

1 banana

1 tsp coconut oil or butter

1/3 cup frozen berries warmed in the microwave for 20 seconds (fresh berries work too)

2 tbsp almond butter

sprinkle of cinnamon

2 tbsp plain kefir (optional)

Directions

1: Heat a pan to medium, and add a teaspoon of coconut oil or butter. Slice up your banana, and add the slices to the pan face down. Cook the slices for about 4 minutes, then flip each slice and cook for another 4 minutes. The slices should be golden all over.

2: In the meantime, add your quick oats and water to a microwave safe bowl, and microwave for 2 minutes or until the oats have absorbed all of the water. Stir in a pinch of salt and your milk of choice.

3: If you are using frozen berries, warm them in the microwave for 20-30 seconds. Next, top your oatmeal with the caramelized bananas, berries, almond butter, cinnamon, and kefir. Enjoy!
