Vegan Chocolate Peppermint Fudge (Total Time: 75 minutes, Prep Time: 15 minutes, Serves: 4-6)
Nut butter fudge is always one of my favorite things, but I was hesitant to try it with peppermint; nuts and peppermint don’t necessarily sound like a smashing combo to me. I’m happy to report that it actually turned out delicious! By using a mild nut butter like cashew butter, the peppermint and cocoa easily overwhelm any nut flavor and it just ends up tasting like delicious buttery fudge. The combination of nut butter and maple syrup make this a slightly healthier and lighter alternative to the original sugar packed treat, but it still tastes very rich and indulgent.
Ingredients
1/4 cup coconut oil
1/4 cup cashew butter
1/4 cup maple syrup
1/4 tsp peppermint extract
3 tbsp unsweetened cocoa powder
4 crushed peppermint candies
Directions
1: Start by melting your coconut oil and cashew butter in the microwave. Once melted, whisk in your maple syrup and peppermint extract until well combined.
2: In a plastic bag, crush up your peppermint candies into small pieces. Next, stir your cocoa powder into your fudge mixture until no lumps remain. Whisk in half of your crushed peppermint candies.
3: Line a small tupperware (about 4×4″ to 5×5″) with plastic wrap. Pour in your fudge mixture, then top with the remaining candies. Let the fudge set in the fridge for at least an hour or until hardened.
4: Cut into pieces of your desired size and enjoy!
