1.) This quick potato salad only takes 5 or so simple ingredients. Start by washing you potatoes and kale.
2.) Cook your potatoes in a boiling pot of water for 15-20 minutes depending on their size. Make sure the water is deep enough to cover all of the potatoes. To test if your potatoes are done, stick a knife in one. If it inserts very easily, your potatoes are done.
3.) Chop your potatoes into 1-2 inch cubes or triangles, and chop your kale finely. Then in a large bowl, mix your tahini, olive oil, spices, salt and pepper. Once mixed well, stir in your kale and potato chunks until they are evenly coated.
4.) Enjoy!
Tahini Kale Potato Salad (Total Time: 30 minutes, Prep Time: 10 minutes, Serves: 2-3)
Like most people, I love my potatoes, and potato salad is no exception. I don’t typically make classic potato salad, partly because I never really think about it and partly because I don’t usually have mayo, but I was really craving it one day so I got creative. I love pouring tahini on just about anything, so I thought it might make a good fatty substitute for mayo. I added a little olive oil and dried dill spice mix to give it a more Mediterranean flavor, and a little kale so I could call it healthy-ish. If you don’t like tahini, this may not be the thing for you, but if you do you’ll definitely enjoy this recipe. Feel free to add whatever spices you’d like, I personally used a spice mix containing dried shallots, chives, dill, and parsley, but any Mediterranean spice mix would work.
Ingredients
4 medium sized potatoes (I used a combo of red and yellow)
1 finely chopped cup of kale
1/4 cup tahini
1/4 cup olive oil
1-2 tbsp of your desired spice mix
1 generous pinch of salt
1 generous pinch of pepper
Directions
1: Start by washing your kale and your potatoes. Fill a large pot with enough water to cover your potatoes, add your potatoes, and turn the stove on high to boil your potatoes. Boil your potatoes for 15-20 minutes depending on their size. (If you have never boiled potatoes before, use this guide.)
2: To test if your potatoes are done, insert a knife into a potato. If it slides in very smoothly, your potatoes are done. Remove your potatoes and chop them into 1-2 inch evenly sized cubes or triangles. Chop your kale finely. In a large bowl add your tahini, olive oil, and spices and stir well. Add in your kale and potatoes and mix well so that everything is evenly coated. This dish makes a great side, enjoy!
