Sweet Potato Boats

1.) Start by washing and scrubbing your sweet potato. Then poke a few holes in it so it doesn’t explode later! Pop it in the microwave for 9 minutes if your potato is large, or about 7 minutes for a normal sweet potato.

2.) Take your potato out of the microwave and cut it vertically down the middle. The middle should be soft to the touch, if it’s not, put it back in the microwave for another minute or two.

3.) Next, take a spoon and just press down the middle of the potato, it should start looking like a boat! There’s no need to remove any potato, you just have to press down firmly with your spoon.

5.) Lastly, pile on the toppings! I used chicken, black beans, avocado, tomatoes, and vegan ranch dressing.


Sweet Potato Boats (Total Time: 10 minutes, Prep Time: 2 minutes, Makes: One serving)

 A full meal with two minutes of prep time sounds pretty good to me! This is just about as easy as it gets, and you likely already have most of the ingredients in your pantry. This recipe is great way to get a hearty, balanced meal when you are running short on time. Sweet potatoes are full of good vitamins and are very filling, plus the toppings will give you some extra protein and flavor.  I’ve gotten tired of having to settle for a sandwich every time I’m in a rush, and I found that this is a much easier, much more filling option that is just as quick.

Ingredients

1 sweet potato

A few slices of avocado

A handful of black beans

A handful of diced tomatoes

Optional: chicken, steak, sausage

Dress with: ranch dressing, salsa, sour cream, plain greek yogurt, ketchup

Directions

1: Wash and scrub your sweet potato, then poke 3-4 holes in it.

2: Put your sweet potato in the microwave for 7-9 minutes depending on the size of your potato. You want to make sure that the sweet potato is cooked all the way through. You could also bake it in the oven but I don’t have time for that:) While your potato is in the microwave, you can get any of your toppings ready.

3: Slice your potato vertically down the middle, and make sure the center is soft to the touch, if it’s not, just throw it back in the microwave for a minute or two.

4: Smush the inside of the sweet potato down with the back of a spoon, until it looks a little bit like a canoe.

5: Load up your potatoes, the more the better!
