3.) Heat up your waffle iron and follow it’s instructions. (I usually spray the iron a little bit even if it’s non-stick.)
4.) Once your waffle’s are cooked, stack ’em up and add the toppings of your choice. I topped mine with a mixture of almond butter and maple syrup, then sprinkled on some pumpkin seeds and mini chocolate chips.
Pumpkin Chocolate Chip Waffles (Total Time: 10 minutes, Prep Time: 5 minutes, Makes: 2 regular or 5 mini)
I’m a big fan of pumpkin and most fall produce, so as soon as the first signs of fall showed up, I had to pull out the pumpkin puree. I was really craving waffles, so I figured I’d mix some of my favorite things together! To make things even better, I found a mini waffle iron at Marshall’s for only $7. I highly recommend buying one of these mini waffle irons, waffles are great already, but when they are the size of your palm they become irresistible. I added some protein powder to this recipe because your girl is trying to get swol, but if you choose not to add protein powder, I would recommend subbing in an equal amount of flour and doubling the maple syrup. You can top these waffles with whatever you like; for mine I heated up a little bit up maple syrup and almond butter then sprinkled on some pumpkin seeds and mini chocolate chips. (This syrup/sauce was a hit, I highly recommend!)
Ingredients
1/3 cup pure pumpkin puree
1 egg
1/4 cup almond milk
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp baking spice
1 tsp baking powder
A pinch of salt
1/4 cup vanilla protein powder (I use Bob’s Red Mill)
1/4 cup almond flour
1/4 cup oat flour
1/4 cup oats
2 tbsp mini chocolate chips (Or however many you want.)
*Note: You can sub in regular flour or regular milk if you consume gluten and dairy.
Directions
1: In a bowl, mix together your wet ingredients. Add in the rest of your ingredients and mix until well combined.
2: Turn your waffle iron on and allow it to heat up. Spray your iron with a touch of oil, then scoop in the appropriate amount of batter. Once the waffle iron indicates that your waffle is cooked, remove it and continue this process until you have used all of the batter.
3: Stack your waffles and top them with your favorite condiments. Slice them up and enjoy!

It only costs me about $50 a year for the domain name, if you decided to pay for a blog plan it can get pricey, but there are free ones available!
