1.) A few simple ingredients help turn bland brussels sprouts into a delicious dish.
2.) Start by placing your brussels in pot of lightly salted water and fill with enough water to cover the brussels. Cover the pot and gently boil for 10-15 minutes until you can easily slide a knife into a brussels sprout.
3.) In a separate bowl, mix together your spices, oil, and maple syrup.
4.) Coat your boiled brussels in the oil mixture.
5.) Spread your brussels on a sheet pan and stick them in the oven on 400 degrees for 10-15 minutes until they start to crisp up, but not long enough for them to burn.
6.) Top your brussels with crumbled goat cheese and chopped toasted pecans. Enjoy!
Maple Roasted Brussels Sprouts (Total Time: 40 mins, Prep Time: 10 mins, Serves: 4)
I love roasted brussels sprouts; I tried this combination of flavors at a restaurant recently and decided to try and recreate it. The restaurant definitely fried their brussels sprouts, so I created a slightly healthier version by boiling and roasting. While they’re not as perfect as the one’s at the restaurant (Tango in Seattle, in case you’re wondering) they are still pretty tasty. The combination of goat cheese, pecans, and maple makes these unattractive veggies a little bit more of a star.
Ingredients
2.5 cups of brussels sprouts
3-4 tbsp of olive oil
1 tbsp maple syrup
1/4 tsp smoked paprika
1/4 tsp cumin
1/2 tsp salt
Directions
1: Start by placing your brussels in a pot and filling it with water until the sprouts are covered. Place a lid on the pot, and bring to a boil on the stove. Once your brussels have been on the stove for 10-15 minutes, take them off of the heat. You want to be able to easily slide a knife into a sprout, but you do not want the sprout to be mushy or falling apart.
2: Turn your oven on to 400 degrees. In a separate bowl, mix together your spices, maple syrup, and oil, then coat your brussels sprouts in this mixture. Transfer your sprouts to an oiled sheet tray and spread them out.
3: With a fork, spoon, or your hand, press on each brussel sprout to smash it down slightly. (If you have ever seen smashed baked potatoes, this is the same concept.) Place your sprouts in the oven for 10-15 minutes until they are crispy and slightly golden.
4: Toss your sprouts with crumbled goat cheese and chopped toasted pecans. Enjoy!
