Ham and Cheese Avocado Toast (Total Time: 7 minutes, Serves: 1)
At only four ingredients and four steps, this makes for a super easy breakfast or snack. It takes about three minutes of actual prepping, and then you can let your toaster/oven do the rest. No, it’s not gluten free or vegan, but it’s delicious and full of good fats and protein! (There’s about 30g protein total.) I’m not a huge fan of eggs, but I imagine placing a fried or scrambled egg in between the two halves would make for a pretty good breakfast sandwich as well! For the photos above, I used a flax english muffin, cheddar cheese, and leftover ham from Easter, however any variation of these ingredients will work!
Ingredients
1 sliced and toasted english muffin
1/2 a ripe avocado
2-4 slices of deli ham
About 1/3 cup of shredded cheese (just enough to cover each english muffin)
Directions
1: Start by toasting your english muffin and shredding your cheese. In the meantime, turn your oven on to “broil” so it can heat up. (A toaster oven also works for this recipe.)
2: Next, mash 1/4 of an avocado onto each english muffin so that it’s evenly spread out.
3: Place 1-2 slices of ham on each piece of toast. You can either fold the ham to fit on the english muffin or tear it up and place it evenly over each half. Sprinkle your cheese on each piece of toast so that it is evenly distributed.
4: Last, place your english muffin halves onto a baking sheet, and then into the oven. It usually takes only about 3-4 minutes for the cheese to broil and begin bubbling. I generally take my english muffin out of the oven once the cheese is fully melted and starting to crisp up on the edges.
5: Eat up!
