1.) Start by gathering your ingredients or roasting your cashews if you did not buy them roasted.
2.) Add all of your ingredients to a blender.
3.) Blend until well combined. I like to stop blending mine before it becomes a puree in order to keep some texture, but either way it tastes delicious!
4.) You can spread this pesto on toast, crackers, vegetables, sandwiches, or mix it into a grain bowl! Store this spread in an airtight container in the fridge.
Cashew Pesto Spread (Total Time: 5 minutes, Makes: About 3/4 cup worth)
I was really in the mood to make pesto the other day, but sadly the grocery store I went to didn’t carry pine nuts, so I decided to substitute cashews instead. I also ended up forgetting garlic and a number of other things, so classic pesto definitely wasn’t going to happen. I came up with this recipe instead, and I must say I was pleasantly surprised. This pesto has a texture that’s more similar to a spread than a sauce, which makes it perfect to put on sandwiches or wraps. This recipe is crazy easy to make, and while I haven’t tried using other nuts, I’m sure toasted pine nuts or almonds would taste great.
Ingredients
1/2 packed cup of basil
1/3 cup roasted cashews
1/4 to 1/3 cup parmesan cheese
1/8 cup plus 1 tbsp olive oil
1 tbsp everything seasoning or 1 clove of garlic
1 pinch of salt to taste
Directions
1: Add all your ingredients to a blender.
2: Blend everything until your pesto is well combined. Leaving a few small lumps in the spread adds a nice texture.
3: Serve it up as a dip, or use it on sandwiches, wraps, or bowls!
