1.) Finely chop your kale, grate your carrots, wash your blueberries, and choose your pancake mix.
2.) Mix your non veggie/fruit ingredients first, then add in the rest.
3.) Set your burner to medium, then using a large spoon, dollop on your batter and spread it out so it’s thin.
4.) Flip your pancakes when the bottom is very golden brown all over, and bubbles have formed on top, then let the other side cook.
5.) You can let ’em cool or eat them hot, and top with whatever you want! (I highly suggest maple syrup and bananas.)
Carrot Kale Pancakes (Total time 20 minutes: Makes 6)
These pancakes are a nice way to get your veggies in, the kale and carrots are very subtle, the blueberries do a pretty good job of hiding them! I used a paleo pancake mix that has coconut flour, almond flour, and dried eggs, but you can use whatever pancake mix you like and just mix in the fruit, veggies, and honey. They may seem a little complicated for pancakes, but trust me, if a blonde can do it so can you!;) They are also tasty if you save them, and pop them in the toaster to take on the go.
Ingredients:
3/4 cup pancake mix*
1/2 cup almond milk
1/2 cup blueberries
1 cup finely chopped kale
1/2 cup carrots
1 tablespoon coconut oil
1 tablespoon honey
* If you are using a different pancake mix than I used, follow it’s exact directions, add in the coconut oil, honey, fruits/veggies, and then see if you need to add the almond milk. If your mix is too thick and doesn’t look like the photo, I would suggest adding the almond milk.
Directions
1: Wash and finely chop the kale
2: Grate your carrots (2 carrots will make half a cup)
3: Wash your blueberries
4: Add your mix, almond milk, oil, and honey to a bowl and mix well
5: Add the kale and carrots and mix well
6: Fold in your blueberries
7: Oil a pan on medium heat, then using a large spoon, dollop the batter onto the pan and spread it out so that you have a thin, round pancake
8: Flip your pancakes when the bottoms are very golden brown, and bubbles are forming on top
9: Remove your pancakes from heat when both sides are a dark golden brown, and cooked through
10: Top with maple syrup, or whatever you like, and enjoy!
