5 Minute Lettuce Wraps (Total Time: 5 minutes, Prep Time: 5 minutes, Makes: 3 wraps)
Looking for a way to use up your leftover Thanksgiving turkey? Look no further. These wraps are essentially carb free, and are delicious as a small lunch or perfect as a snack. I can’t think of an easier or quicker savory snack to whip up. Don’t have 30 seconds to roll them? It’s all good, just shove the lettuce boats in your mouth! If you’re vegan you could sub in some tofu and nutritional yeast in place of the turkey and goat cheese. Either way, it’s a deliciously fast snack.
Ingredients
3 large washed leaves of lettuce/kale (about the size of a small hand)
3 large spoonfuls of hummus (I like roasted red pepper hummus.)
1/3 an avocado
3 slices of deli turkey, or 3 large spoonfuls of shredded turkey
3 crumbles of goat cheese
3 toothpicks
Directions
1: Start by spreading a spoonful of hummus onto each leaf. Then add some sliced up avocado. (1/3 the amount needed for the whole recipe.) Next layer on a spoonful or slice of turkey. Last, sprinkle on a crumble of goat cheese.
2: Roll up your lettuce wraps from the top of the leaf to the stem. Secure them with a toothpick, and enjoy!
