Raw Chocolate Coconut Brownies

1.) For your base, all you need is these four ingredients, plus a little water.

2.) Add all your base ingredients to a food processor and blend until well combined.

3.) You should have a doughy texture like this.

4.) Line a 5×9 (Banana Bread Pan) Pan with parchment paper, then press your dough evenly throughout the pan. Place the pan in the freezer.

5.) For your topping, you’ll need these four ingredients.

6.) Place all your topping ingredients in a jar and shake well for a few minutes.

7.) Pour your topping over your base, sprinkle with coconut, and put the pan back in the freezer.

8.) Let the bars sit in the freezer for at least 45 minutes, or until the topping is set. Cut them up and enjoy!

Raw Chocolate Coconut Brownies (Total Time: 55 minutes, Prep time: 10 minutes, Makes: 12 bars)

If you’re looking for something rich and decadent, make these. I came up with this recipe late one night when I was really craving chocolate, then I ate all of them within 24 hours because they really aren’t that bad for you! One of my favorite things about these bars, besides the double chocolate layer, is the mix of creamy, crunchy, and gooey textures. I recommend making these bars and letting them sit in the freezer while you go work out. When you get back, you’ll have a delicious treat that will satisfy your afternoon sugar cravings.

Ingredients:

Base

5 pitted dates

1/2 cup shredded unsweetened coconut

1/4 cup chocolate protein powder

2 tbsp cocoa powder

1/4 cup water

Topping

1/4 cup plus 1 tbsp cold coconut milk (Make sure you shake it up before pouring.)

1 tbsp cocoa powder

1 tbsp maple syrup

1 large pinch of cinnamon

Directions:

1.) Place all your base ingredients in a food processor and blend until combined into a doughy texture.

2.) Line a 5×9 pan with parchment paper, then dump your dough in and press it evenly into all edges of the pan. Place this pan in the freezer.

3.) Place all your topping ingredients in a jar, then shake well for about two minutes.

4.) Pour your topping over your base and make sure it is evenly spread on the brownie base. Sprinkle with more shredded coconut if you’d like, then place the brownies back into the freezer for at least 45 minutes, or until the topping has set up.

5.) Cut your bars into 12 pieces and enjoy! Make sure you store them in the freezer if you don’t eat them all in one sitting 😉

    These are delicious! Not too rich, but taste like a Mounds bar, only better. Yum!
