Zucchini Spinach Frittata

1.) Chop up the zucchini and ham, then grate your cheese.

3.) In a small pan on medium heat, add a tablespoon of olive oil, then after a minute, your veggies and ham. In the meantime turn your oven on to broil.

4.) In a separate bowl, mix your two eggs with a fork or whisk.

5.) Pour the eggs over the veggies and ham, making sure it spreads evenly.

6.) Sprinkle your cheese over the frittata, then put the whole pan in the oven for 3 minutes.

7.) After 3 minutes, your frittata should be slightly golden and puffed up, but not burnt!

8.) Top with salt and pepper. I also suggest adding avocado and/or salsa, because the more food the better right?


Zucchini Spinach Frittata (Total time: 15 minutes, Serves 1)

A meal for any time of day, plus it makes a fairly heaping portion. This is something I like to eat for lunch after a workout, and before I go to work since it’s full of protein, and extremely filling. It also packs in a nice amount of veggies, even though it’s hard to tell because they shrink down so much. If you feel like straying from the recipe a bit, any leftover meat or veggies work great and save you even more time. I chose these ingredients because I often have them available at my house, but you can easily add or replace things to customize this recipe to your convenience.

Ingredients:

1 zucchini

2 small handfuls of spinach or lettuce mix

3 slices of deli ham chopped into small “square-ish” shapes

A couple of tablespoons of grated hard cheese like parmesan

2 eggs

1 tbsp olive oil or coconut oil

Optional: Avocado, Salsa

Note* If you are using a large pan, double the ingredient amounts, and it will make exactly two servings!

Directions:

1: Wash your zucchini and lettuce (Unless you get the pre-washed kind like me because who really has time to wash lettuce?)

2: Slice up your ham and grate your cheese

3: Heat up a small pan with your oil on medium heat

4: Add your veggies and ham to the pan and sauté until they are golden and have shrunk significantly in size

5: Turn oven on to broil

6: Mix up your eggs in a bowl

7: Pour eggs over the veggie/ham mixture and make sure it is spread evenly, then sprinkle cheese on top

8: Place in oven for 3 minutes, until puffed and slightly golden

9: Add any toppings you want, and eat the whole thing:)
