Cinnamon Apple Pancakes

 1.) All the seven ingredients you’ll need! As usual, I highly recommend Birch Benders Paleo Pancake Mix, but any mix will work.

2.) Start by peeling your apples, it doesn’t have to be perfect. As you can tell from my peeling job, I don’t have the patience to get every little piece off!

3.) Next, core your apples and chop them into very small pieces. For your pecans, slice them in half and then finely chop them.

4.) Mix all the ingredients together in a bowl except for the apples and pecans. It should be a much darker color than your usual pancake mix, due to the cinnamon and vanilla.

5.) Now you can stir in the apples and pecans!

6.) Put your pan on medium high while you heat your oil up, then turn it down almost to medium when you put your pancakes on. Spread the batter around a bit to make a circular shape.

7.) Once you the top of your pancakes have been puffing up and bubbling, and the bottoms are golden brown, you can flip em’. These pancakes shouldn’t be super flat, so if you’re getting a little bit of “volume” in them, you’re doing it right!

 8.) Your kitchen should be smelling pretty good at this point! Top them with pure maple syrup, plain greek yogurt, whipped cream, or peanut butter.

Cinnamon Apple Pancakes (Total Time: 15 minutes, Makes: 6 Pancakes)

Thanks to my neighbors very abundant apple tree, I decided I had better figure out a way to use the apples before they went bad. As usual, I figured why not throw them in a pancake. A simple apple pancake sounded a little boring to me, so I added pecans, vanilla and cinnamon to bump up the flavor. In me and my stomach’s opinion, they turned out pretty good. For breakfast, they pair really well with your basic pancake toppings, and for a snack they’re delicious with some creamy peanut butter on top. On the health side of things, you’re getting , carbs, protein, and fat all in one bite. All in all these cakes are a win.

Ingredients

1 large apple or 2 small apples, finely chopped

1 cup almond milk

1 cup pancake mix

16 drops of stevia (If you don’t have stevia use 2 tbsp maple syrup)

1 tsp cinnamon

1tsp vanilla

11 pecan finely chopped

Coconut oil for the pan

Directions

1: Peel your apples.

2: Finely chop your apples and pecans.

3: In a bowl, mix all your ingredients together, except for you apples and pecans. While you’re doing this, heat up your pan with coconut oil on medium high.

4: Stir your apples and pecans into your pancake mixture.

5: With a large spoon, dollop your batter onto your pan and spread it around to make a circular shape. Turn the heat on your pan almost down to medium, so that you don’t burn your cakes.

6: Once the pancakes are bubbling and puffing up, and the bottoms are golden brown, flip them over. Continue to cook them until both sides are golden brown.

7: Eat! Enjoy them plain or with your favorite toppings.
