Vegan Chocolate Tofu Pudding

Vegan Chocolate Tofu Pudding (Total Time: 5 minutes, Serves: 1-2)

I’m currently at school without a nice camera, so I decided to go ahead and try my hand at a video. This was a one-take type of deal because time is not free around here! Anyways, I was in the grocery store the other day and saw that silken tofu was on sale, and I figured I could probably throw it in something. Being a big tofu hater, I was pretty hesitant about what I would make with it, but I’d heard of other people putting it in smoothies and pie fillings. As you all know, chocolate always sounds good to me, so I whipped up this chocolate pudding! I’m not sure how pudding-like it actually is, (Can’t remember the last time I had pudding.) but it’s definitely like a thick milkshake. Whatever you want to call it, it’s super easy, super quick, and surprisingly pretty dang good for you!

Ingredients

1 chopped up frozen banana (non-frozen will also work)

1/2 a package of silken tofu (about 1 cup)

2-3 tbsp cocoa powder

2-3 tbsp maple syrup

1 tsp cinnamon

1tbsp nut butter (optional)

Directions

1.) Blend for 1-2 minutes until very smooth. Top with whatever you’d like and enjoy!
