Pistachio Avocado Fries

1.) These tasty bites only require 5 ingredients. Start by heating your oven up to 400 degrees.

2.) Start by cutting your avocado’s. I decided to cut mine into (roughly) 1-2 inch by 1/2 inch strips. The size or shape doesn’t matter too much for this recipe, just make sure you don’t have a couple of huge pieces of avocado mixed with some really tiny ones.

3.) Start by dropping a piece of avocado into your flour and lightly coating all sides.

4.) Next, whisk your eggs in a bowl, and drop your floured avocado into this. Gently turn the avocado in the egg so that all sides are coated with the egg.

5.) Blitz your nutritional yeast and pistachios together in a food processor until you have a crumbly mixture, but not a super fine mixture. Drop you avocado slice (the one you covered in flour and egg) into this mixture and gently coat all sides.

6.) Place your avocado slice on a lined baking sheet, then continue the dredging process for every slice.

7.) Once you have coated every slice of avocado, place your baking sheet in the oven on 400 degrees for about 17 minutes. You want your fries to be golden brown and crisp, but not burnt.

8.) Don’t wait long to eat these fries, they are best served as they are when they come out of the oven; hot and crispy. I recommend dipping them in your favorite sauce. I mixed a few drops of hot sauce with vegan ranch. Delicious!

Pistachio Avocado Fries (Total time: 30 minutes, Prep time: 13 minutes, Makes: Roughly 30 fries)

As much as I seriously LOVE avocado’s, (I’m eating one as I write this.) I have to admit they are a little boring plain. If you’ve ever had avocado inside a warm panini, you’ll understand where I got my inspiration from for this recipe. Avocados are already smooth and buttery, but when warmed up, they get taken to another level. With these avocado “fries” you get the perfect balance of crunchy, creamy, and salty.

As great as these avocado fries are plain, sauces always seem like a good idea to me. Any of your favorite sauces will work to dip the fries into, however I highly recommend a spicy ranch. To make my own, I mixed a few drops of hot sauce with vegan ranch, and wallah! Give these fries a go the next time you want something warm, cozy, and a little indulgent.

Ingredients:

3 ripe avocados

2 eggs

1/2 cup gluten free flour (You can use regular flour as well.)

3/4 cup salted pistachios

2 tbsp nutritional yeast

Directions:

1: Set your oven to 400 degrees. Begin slicing up your avocado’s into your preferred fry shape. I usually start by cutting the avocado in half and peeling the skin off, then slicing the avocado twice vertically, and once horizontally across the middle. (You would get 6 slices per half of an avocado.)

2: Next, get your dredge ready. Place your flour into a bowl or plate. In another bowl, whisk your eggs until they are combined. Place your pistachio’s and nutritional yeast into a food processor and blitz until the mixture is not quite a powder. (You want to leave some texture.) Transfer this mixture into your last bowl.

3: Line a baking sheet with parchment paper, then get dredging! Coat a slice of avocado lightly in flour. Next, drop this slice into the egg mixture and make sure all sides get coated. Transfer the slice into the pistachio crumble and coat each side of the avocado. Place the slice onto the baking sheet.

4: Repeat the dredging process for every slice of avocado.

5: Bake the “fries” in the oven on 400 degrees for 17 minutes. The avocado’s should be golden brown and crisp, but not burnt.

6: Choose your favorite sauce, or mix some hot sauce into ranch/vegan ranch. Dip your fries while they’re hot and enjoy!
